They did. It was called Dirge of Cerebus, and featured Vincent as its main character. It wasn't very good.
Personally, I think any sequel or remake of FF7 would ruin it.Its a classic, and should remain that way.
And for the record, weddings in video games are extremely lame unless something sinister is happening in them. Nice, happy weddings do not make for enjoyable gameplay.
